With Fall right around the corner, it’s time to start making hot soothing soups. This Chic Pea & Spinach Soup doesn’t just taste great; it’s filled with healthy fresh ingredients.

The baby spinach used in the recipe is a great source of vitamin A, iron and folic acid. Using canola oil helps your intake of omega-3 fatty acids. We saw last week that mushrooms are a great source of vitamin D and they are also low in calories for a guiltless taste boost.

1 tbsp. canola oil
1 can chic peas, drained
3 large shiitake mushrooms, cleaned
1” piece ginger, peeled
½ shallot
3 garlic cloves, peeled
2 leeks, cleaned & chopped
1 onion, peeled & diced
4 cups of vegetable stock
2 cups baby spinach
